Merlot is softer than Cabernet, making it perfect for new winemakers. It has less tannin and drinks more smoothly.
Recipe
Use 20-25 lbs Merlot grapes. Ferment 5-7 days. Press and age 6-12 months. Merlot doesn't require heavy oak - use neutral oak or stainless steel.
