Primary Fermentation

Press & Transfer

Press skins, transfer wine to carboy.
Malolactic Fermentation

Inoculate with MLB. Keep above 64Β°F. Test for completion.
First Racking

Rack off gross lees. Add sulfite (25β30 ppm free SOβ).
Aging

Bulk age in carboy or barrel. Top up monthly.
Second Racking

Rack again. Fine if needed. Check SOβ and pH.
Bottling
