Crush & Destem

Crush grapes and add sulfite. Take OG reading.

Cold Soak (Optional)

Day 1–4

Hold at 45–55Β°F for color and flavor extraction.

Primary Fermentation

Day 4–14

Apr 8, 2026 β†’ Apr 18, 2026

Pitch yeast. Punch down cap 2–3Γ— daily. Monitor temperature (75–85Β°F).

Press & Transfer

Day 14

Apr 18, 2026

Press skins, transfer wine to carboy.

Malolactic Fermentation

Day 15–45

Apr 19, 2026 β†’ May 19, 2026

Inoculate with MLB. Keep above 64Β°F. Test for completion.

First Racking

Day 45

May 19, 2026

Rack off gross lees. Add sulfite (25–30 ppm free SOβ‚‚).

Aging

Day 46–166

May 20, 2026 β†’ Sep 17, 2026

Bulk age in carboy or barrel. Top up monthly.

Second Racking

Day 120

Aug 2, 2026

Rack again. Fine if needed. Check SOβ‚‚ and pH.

Bottling

Day 180

Oct 1, 2026

Final sulfite addition. Bottle and cork.

Bottle Aging

Day 181–271

Oct 2, 2026 β†’ Dec 31, 2026

Store on side. Minimum 3 months before drinking.
